  • 56 garlic cloves, minced
  • 1 onion, diced
  • 2 stalks celery, finely chopped
  • 2 cups mushrooms, quartered
  • 4 baby bok choy, halved
  • 4 cups low sodium vegetable stock or water
  • 1 cup thin rice noodles
  • 1 tablespoon lime juice
  • 1 teaspoon turmeric powder
  • black pepper
  • salt
  • red chili flakes

Instructions

  1. In a large pot, heat oil over medium heat. Sauté diced onion, celery, garlic, and ginger until soft (about 5 minutes).
  2. Stir in turmeric powder, black pepper, bay leaves, and chili flakes; cook for an additional minute.
  3. Pour in vegetable stock and bring to a boil. Then lower the heat to simmer.
  4. Add mushrooms and bok choy; cook until tender (about 5 minutes).
  5. Stir in rice noodles; simmer until cooked through (3-4 minutes).
  6. Remove from heat; mix in lime juice and cilantro. Adjust seasoning as needed.
