  • 1 3/4 cups non-dairy mylk
  • 2 flax eggs
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (or other fruit)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking pan with non-stick spray.
  2. Prepare flax eggs by whisking together ground flaxseed and water; set aside for thickening.
  3. In a large mixing bowl, combine rolled oats, chopped nuts, spices, baking powder, and salt.
  4. In another bowl, mix applesauce, non-dairy mylk, flax egg mixture, maple syrup, and vanilla until well combined.
  5. Combine wet and dry ingredients gently until just mixed; fold in blueberries or your choice of fruit.
  6. Pour into the prepared pan and bake for 35–45 minutes until set but slightly soft in the center.
