  • 2/3 cup warm water
  • 2 1/2 teaspoons instant dry yeast
  • 1/3 cup tomato pizza sauce
  • 1 cup vegan mozzarella-style cheese (optional)
  • 1/2 cup red capsicum, finely chopped
  • 1/2 cup mushrooms, finely chopped
  • 1/2 cup baby spinach leaves, finely chopped
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sugar (optional)
  • 1/2 teaspoon salt
  • 3 tablespoons extra virgin olive oil for brushing
  • 2 teaspoons dried mixed Italian herbs

Instructions

  1. In a mixing bowl, combine warm water and yeast; let sit until frothy (5-10 minutes).
  2. Mix in flour, salt, and olive oil until dough forms. Knead on a floured surface for 5-7 minutes.
  3. Place in an oiled bowl, cover with a cloth, and allow to rise in a warm spot for 60 minutes.
  4. Preheat oven to 375°F (190°C). Roll out risen dough into a rectangle.
  5. Spread tomato sauce over the dough, sprinkle with veggies and vegan cheese if using.
  6. Roll tightly into a log shape and cut into pieces.
  7. Place on parchment-lined baking sheet and brush with olive oil mixed with herbs.
  8. Bake for about 15 minutes or until golden brown.
