  • 3/4 cup wild rice blend
  • 4 cups diced mushrooms (mixed varieties)
  • 1 cup diced white onion
  • 2 cloves minced garlic
  • 2 tablespoons vegan butter (or oil)
  • 56 cups vegetable broth
  • 14-ounce can coconut milk
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water and soak in cold water for 15-30 minutes.
  2. Chop mushrooms and onions while the rice soaks.
  3. In a large soup pot over medium heat, melt vegan butter. Sauté onions and garlic for about 5 minutes.
  4. Add mushrooms and cook for another 10 minutes until browned.
  5. Season with salt, pepper, and dried parsley; then add vegetable broth, drained wild rice, and coconut milk. Stir well.
  6. Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
  7. Remove lid, stir gently, and continue cooking uncovered for an additional 15-20 minutes until the rice is tender.
