  • 1/2 yellow onion (chopped)
  • 1 red bell pepper (diced)
  • 3 garlic cloves (minced)
  • 1/4 cup chili powder
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 1 tablespoon tomato paste
  • 3 cups vegetable broth
  • 1 1/4 cups dry brown or green lentils
  • 1 (28 oz) can crushed tomatoes
  • 1 (14 oz) can black beans (drained & rinsed)
  • 3 tablespoons minced cilantro

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Sauté the onions until tender (about 5 minutes), then add the red bell pepper and cook for another 2 minutes.
  2. Stir in garlic, chili powder, oregano, cumin, tomato paste, and salt; cook for an additional minute.
  3. Add vegetable broth, lentils, and crushed tomatoes. Bring to a boil, then reduce heat to simmer for about 30 to 35 minutes until lentils are tender.
  4. Stir in black beans and cook for another 5 minutes before adding cilantro and serving hot.
