  • 185g icing sugar
  • 60g dairy-free softened butter
  • 4 tablespoons lemon juice
  • Zest of 1 large lemon
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon turmeric or 2 drops yellow food gel

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine flour, baking powder, bicarbonate of soda, turmeric (or food gel), and half of the icing sugar.
  3. In another bowl, beat dairy-free butter and remaining icing sugar until light and fluffy.
  4. Add lemon juice and zest to the creamed mixture and mix until combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions and roll into balls; coat in icing sugar before placing on a parchment-lined baking sheet.
  7. Bake for 10-12 minutes until edges are lightly golden. Let cool before transferring to a wire rack.
