  • Vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • Flour or cornstarch (for thickening)
  • Rutabaga or swede
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce or Tamari
  • Bay leaves, thyme, and rosemary

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden; set aside.
  3. Reduce heat to medium and sweat onions, carrots, and celery until softened.
  4. Add garlic and cook briefly before stirring in flour until well combined.
  5. Gradually pour in non-alcoholic stout (or alternative) while stirring to avoid lumps.
  6. Incorporate rutabaga, potatoes, cabbage, vegetable stock, soy sauce, salt, pepper, sugar, and herbs; mix well.
  7. Bring to a boil then reduce heat to simmer uncovered for 45-50 minutes until vegetables are tender.
  8. Stir in seared vegan beef or mushrooms 10 minutes before serving.
