  • 1 teaspoon baking powder
  • 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup cold vegan butter (cubed)
  • 1/3 cup soy milk
  • 2 tablespoons olive oil
  • 1/2 large onion (finely diced)
  • 5 cloves garlic (minced)
  • 2 medium carrots (peeled & diced)
  • 2 stalks celery (diced)
  • 4 ounces mushrooms (thinly sliced)
  • 1 tablespoon tomato paste
  • 1 tablespoon vegan Worcestershire sauce
  • Salt & pepper to taste
  • 15-ounce can cannellini beans (strained & rinsed)
  • 2.5 cups vegetable broth
  • 12 teaspoons fresh thyme

Instructions

  1. In a mixing bowl, combine flour, baking powder, dried parsley, salt, and black pepper. Add cubed vegan butter and rub into the flour until coarse crumbs form. Gradually add soy milk while stirring until just combined.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté onion until translucent; then add garlic and cook until fragrant. Add carrots, celery, and mushrooms; cook for about 5-7 minutes until softened.
  3. Stir in tomato paste and vegan Worcestershire sauce. Season with salt, pepper, dried parsley, and fresh thyme. Pour in vegetable broth and rinsed cannellini beans; bring to a simmer.
  4. Scoop dollops of the dumpling mixture onto the simmering stew. Cover tightly with a lid and cook for about 15-20 minutes without lifting the lid.
  5. Check that dumplings are fluffy but cooked through before serving hot in bowls.
