  • ¼ cup vegan butter
  • 2 tbsp vegan creamer (oat or soy)
  • ¼ tsp salt
  • 1 tsp vanilla
  • ¾ cup brown sugar
  • 1 tsp vanilla
  • 2 tbsp nondairy milk
  • 1 cup flour
  • ½ tsp salt
  • ½ cup nondairy mini chocolate chips
  • 1820 chocolate sandwich cookies
  • 1 cup nondairy chocolate chips
  • ½ cup peanut butter

Instructions

  1. Line an 8×8 pan with parchment paper.
  2. In a mixing bowl, cream together sugar, vegan butter, and salt until fluffy. Add vegan creamer and vanilla; mix well.
  3. Gradually incorporate brown sugar, then stir in nondairy milk, flour, salt, and mini chocolate chips until combined.
  4. Press the cookie dough mixture into the prepared pan evenly. Crush chocolate sandwich cookies and sprinkle them over the cookie dough layer.
  5. In a microwave-safe bowl, combine nondairy chocolate chips and peanut butter. Heat in short bursts until melted and smooth; pour over the cookie layer.
  6. Refrigerate for at least two hours or until firm. Cut into bars and enjoy!
