  • ¾ cup almond milk
  • ⅓ cup olive oil
  • 2 teaspoons vanilla extract
  • 1 inch ginger (grated)
  • 2½ cups carrots (finely grated)
  • ¾ cup walnuts (chopped or pulsed in food processor)
  • ½ cup raisins
  • 2 ounces vegan butter (diced and softened at room temperature)
  • 1 lemon (the grated zest)
  • 1 teaspoon vanilla extract
  • 4 ounces vegan cream cheese
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 340°F (170°C) and prepare your cake pan.
  2. In a mixing bowl, whisk together flour, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. In another bowl, combine almond milk, olive oil, vanilla extract, and grated ginger; mix into the dry ingredients until just combined.
  4. Fold in the grated carrots, chopped walnuts, and raisins.
  5. Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick comes out mostly dry.
  6. Allow cooling before frosting with a mixture of vegan butter, lemon zest, vanilla extract, vegan cream cheese, and powdered sugar.
