  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 large sweet potato, diced
  • 2 cans black beans, drained and rinsed
  • 1 can fire-roasted diced tomatoes
  • 1 can tomato paste
  • 1 can diced green chilies
  • 2 cups vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the onions until soft, about 5 minutes. Add garlic and cook for an additional minute.
  2. Stir in chili powder, cumin, oregano, and optional garlic and onion powders; sauté until fragrant.
  3. Add black beans, diced tomatoes (with juices), tomato paste, sweet potato, green chilies, and vegetable broth. Mix well.
  4. Bring to a boil then reduce heat to simmer for 30-40 minutes until sweet potatoes are tender. Adjust consistency with more broth if needed.
  5. Serve hot with your choice of garnishes like avocado or cilantro.
