  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • Juice of 1 lime (plus extra wedges for garnish)
  • 1/2 cup full-fat coconut milk
  • 1 tsp chili sauce or sriracha (optional, for drizzle heat)
  • 3 cups cooked jasmine rice
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, chopped
  • Crushed red pepper (optional)
  • Salt to taste
  • Olive oil for cooking

Instructions

  1. In a mixing bowl, whisk together sweet chili sauce, soy sauce, minced garlic, grated ginger, and lime juice. Add chicken thighs, coat well, and marinate for at least 30 minutes.
  2. In another bowl, combine coconut milk with extra lime juice and sweet chili sauce; chill until ready to serve.
  3. Heat a grill pan over medium-high heat with olive oil. Cook marinated chicken for 5–6 minutes on each side until fully cooked (internal temperature of 165°F). Let rest before slicing.
  4. In serving bowls, layer jasmine rice topped with sliced chicken and drizzle with the chilled coconut lime mixture.
  5. Garnish with chopped cilantro, green onions, optional crushed red pepper, and lime wedges.
