Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes

Instructions

  1. In a mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
  2. In a separate bowl, mix diced strawberries with sugar and let sit for about 10 minutes to macerate.
  3. Combine crushed cookies with melted butter until the mixture resembles wet sand.
  4. Lay out a crepe, spread cheesecake filling over it, sprinkle with cookie crumbs, and add the macerated strawberries. Roll tightly into a sushi shape and repeat with remaining crepes.
  5. Wrap each roll in plastic wrap and refrigerate for at least one hour before slicing into pieces dusted with powdered sugar.
