  • 1 ½ lbs skirt steak
  • 1 lb purple cabbage
  • 1 large red pepper
  • 1 large poblano pepper
  • 1 red onion
  • ½ cup freshly squeezed orange juice
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 12 tortillas
  • olive oil
  • kosher salt
  • green onions

Instructions

  1. Preheat oven to 425°F.
  2. Toss halved peppers and onion with olive oil, roast for 35–40 minutes.
  3. In another pan, toss sliced cabbage with olive oil and roast for an additional 25–30 minutes.
  4. Pat dry skirt steak; let sit at room temperature for 30 minutes before cooking.
  5. Blend orange juice, zest, chipotle peppers, and honey until smooth; gradually add neutral oil while blending.
  6. After roasting, peel skins off peppers and chop all roasted vegetables; mix with green onions and half the chipotle sauce.
  7. Sear steak in a hot cast iron skillet for about 3–5 minutes per side; let rest before slicing against the grain.
  8. Assemble tacos using charred tortillas topped with cabbage slaw, steak slices, and remaining chipotle sauce.
