  • 4 cloves garlic (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 medium zucchini (diced)
  • 28 ounces diced tomatoes
  • 6 cups chicken broth
  • 15 ounces dark red kidney beans (drained & rinsed)
  • 15 ounces white cannellini beans (drained & rinsed)
  • 1 cup ditalini pasta
  • Salt & pepper (to taste)

Instructions

  1. Prepare all ingredients: Dice the onion, garlic, celery, carrots, and zucchini. Rinse the beans under cold water.
  2. Combine ingredients: Add the prepared vegetables, beans, diced tomatoes, and chicken broth to the slow cooker. Season with salt and pepper.
  3. Cook the soup: Cover the slow cooker and cook on LOW for 6 hours or HIGH for 4 hours.
  4. Add pasta: About 30 minutes before serving, stir in the ditalini pasta. Replace the lid and continue cooking until tender.
  5. Serve: Ladle the soup into bowls and garnish with grated Parmesan cheese and chopped parsley if desired.
