  • 960 ml chicken broth
  • 240 ml heavy cream
  • 2 red snapper fillets (about 170 g each)
  • 225 g large shrimp, peeled and deveined
  • 15 ml olive oil
  • 28 g unsalted butter
  • 1 tablespoon Cajun seasoning
  • 2 garlic cloves, minced
  • 60 g shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 50 g grated Parmesan cheese
  • 1 teaspoon hot sauce (optional)

Instructions

  1. Cook grits: In a saucepan, bring chicken broth to a boil. Gradually whisk in grits and reduce heat to low. Cook uncovered for 20-25 minutes until thickened. Stir in heavy cream, butter, and cheddar cheese; season with salt and pepper.
  2. Prepare shrimp: Toss shrimp with Cajun seasoning. In a skillet, heat olive oil and butter over medium-high heat; sauté garlic for 30 seconds. Add shrimp; cook until pink and opaque (2-3 minutes per side). Remove from skillet.
  3. Cook red snapper: Season fillets with Cajun seasoning. In the same skillet, cook snapper in olive oil and butter for 3-4 minutes per side until golden brown. Remove.
  4. Make Cajun cream sauce: Sauté garlic in butter; add Cajun seasoning, smoked paprika, and chicken broth; simmer for 2 minutes. Stir in heavy cream, Parmesan cheese; cook until slightly thickened.
  5. Assemble: Spoon grits onto plates; top with snapper and shrimp, then drizzle with cream sauce.
