Ingredients

  • 100 g fresh raspberries (thawed if frozen)
  • 1 tbsp lemon zest
  • 4 tbsp maple syrup

  2. Melt the coconut in a heat-proof bowl placed over hot water, stirring frequently.
  3. Once melted, blend in the raspberries, lemon zest, and maple syrup until smooth.
  4. Press the mixture into the lined pan and refrigerate for 2 hours or freeze for 20-30 minutes until solid.
  5. Slice into squares and enjoy!
