  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic, chopped celery, and diced carrot; cook for about 5 minutes until tender.
  3. Pour in vegetable broth, bring to a boil, then add rinsed quinoa. Reduce heat to low and simmer for 15 minutes.
  4. Stir in corn kernels and coconut milk along with smoked paprika, thyme, salt, and pepper; cook for an additional 5 minutes.
  5. Remove from heat and serve hot, garnished with fresh parsley.
