  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • 1 cup fresh peaches (pureed)
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Additional powdered sugar for filling

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together twice in a bowl.
  3. In another bowl, whip egg whites on low speed until foamy, then gradually add granulated sugar while increasing speed until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites using a spatula until fully combined.
  5. Pipe small circles onto prepared baking sheets and let them rest for about 30 minutes until they form a skin.
  6. Bake for 15-18 minutes until firm but slightly soft when pressed. Allow cooling completely on a wire rack.
  7. For the filling, whip heavy cream, additional powdered sugar, and vanilla extract until fluffy; gently fold in pureed peaches.
