  • 1 tablespoon butter

Instructions

  1. In a saucepan over medium heat, melt the butter for the peach topping. Add sliced peaches, brown sugar, cinnamon, and lemon juice. Cook until tender (about 5-7 minutes), stirring occasionally.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine milk (or almond milk), egg, and melted butter until smooth. Mix wet ingredients into dry ingredients until just combined.
  3. Preheat a skillet over medium heat. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on top (about 2-3 minutes). Flip and cook until golden brown.
