  • 3 medium carrots, sliced
  • 3 celery ribs, diced
  • 10 ounces cremini mushrooms, quartered
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup all-purpose flour (or GF flour blend)
  • 3 cups chicken stock
  • 1 cup whole milk or half-and-half
  • 1 tablespoon Dijon mustard
  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken, shredded
  • 1 cup sweet peas (fresh or frozen)
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a large deep skillet over medium heat. Add carrots, celery, onion, and salt. Cook until softened (6–8 minutes).
  2. Stir in mushrooms and garlic; cook until mushrooms release moisture (about 5 minutes).
  3. Sprinkle flour over the mixture and stir to coat; cook for another two minutes.
  4. Gradually whisk in chicken stock and milk until smooth. Add Dijon mustard and seasoning.
  5. Bring to a simmer; add gnocchi and cook uncovered for about 4–5 minutes.
  6. Stir in cooked chicken and sweet peas; simmer until heated through (3–4 minutes).
  7. Fold in fresh herbs and season to taste before letting the dish rest for five minutes.
