  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth
  • ½ cup uncooked rice or orzo pasta
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • Juice of 2 lemons
  • Fresh dill (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another 1–2 minutes.
  2. Pour in the chicken broth and bring to a boil. Add rice or orzo and simmer for 10–12 minutes until tender.
  3. While the rice cooks, whisk eggs until frothy in a medium bowl. Gradually add lemon juice while whisking continuously.
  4. Temper the egg-lemon mixture by slowly ladling hot broth into it while whisking constantly. Then pour back into the pot slowly while stirring.
  5. Stir in shredded chicken, heat through for about 5 minutes without boiling, then season with salt and pepper.
  6. Serve hot, garnished with fresh dill and lemon wedges.
