  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup kalamata olives
  • 4 cloves garlic
  • 1 lemon (juice only)
  • Feta cheese (optional garnish)
  • Fresh parsley (optional garnish)

Instructions

  1. Begin by prepping all ingredients: cut chicken into bite-sized pieces and slice vegetables.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add chicken seasoned with salt and pepper; cook until golden brown (5–7 minutes).
  3. Remove chicken; add another tablespoon of olive oil if needed. Sauté red onion and garlic for 1 minute before adding zucchini, bell peppers, cherry tomatoes, sun-dried tomatoes, and seasonings. Cook until vegetables are tender-crisp (5–7 minutes).
  4. Return chicken to the skillet; mix well with sautéed vegetables and adjust seasoning if necessary.
  5. Finish by drizzling fresh lemon juice over the stir fry, adding kalamata olives and feta cheese if desired. Serve warm garnished with fresh parsley.
