  • 16 ounces extra-firm tofu
  • 16 ounces vegan gnocchi
  • 2 tbsp vegan butter
  • 78 large garlic cloves
  • 1 1/2 cups vegetable broth
  • 1/2 cup white apple vinegar
  • 1 1/2 cups oat milk or cashew cream
  • 2 tbsp tomato paste
  • 6 ounces sun-dried tomatoes
  • Fresh basil for garnish

Instructions

  1. Press tofu for at least 1 hour to remove excess moisture, then cube and toss with arrowroot starch, salt, and pepper.
  2. In a large frying pan, heat vegan butter over medium heat and fry the tofu until golden brown; set aside.
  3. In the same pan, sauté garlic until golden, then add vegetable broth and vinegar to deglaze.
  4. Stir in oat milk or cashew cream, flour, vegan cheese, parsley, and chili flakes; simmer for about 3 minutes.
  5. Mix in tomato paste and chopped sun-dried tomatoes; cover and simmer for another 5 minutes.
  6. Cook gnocchi according to package instructions until they float (about 3-4 minutes).
  7. Combine fried tofu and cooked gnocchi into the sauce; adjust thickness with reserved pasta water if needed.
  8. Serve hot topped with fresh basil.
