  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt (for bread)
  • 1½ teaspoons pumpkin pie spice
  • ¼ cup milk
  • 1¼ teaspoons maple extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ¼ teaspoon maple extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix chopped nuts with brown sugar, flour, cinnamon, salt, and melted butter for the topping.
  3. In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. In a large bowl, beat eggs and sugar until smooth; add oil, pumpkin puree, milk, and maple extract.
  5. Combine dry ingredients into wet ingredients gently until just mixed.
  6. Pour half the batter into the loaf pan; layer half the topping mixture. Add remaining batter followed by the rest of the topping.
  7. Bake for about 50 minutes or until a toothpick comes out clean.
  8. Let cool before transferring to a wire rack; drizzle with optional glaze if desired.
