  • 2 Zucchini (chopped)

  • 1 Green Bell Pepper (chopped)
  • 2 Roma Tomatoes (diced)
  • 1 cup Canned Diced Tomatoes (drained)
  • 2 tsp Minced Garlic
  • 2 tsp Italian Seasoning
  • 2 cups Beef Broth
  • 1 cup Monterey Jack Cheese
