  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast; let sit until frothy (about 5 minutes).
  2. In a larger bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  4. Place the dough in an oiled bowl, cover with a towel, and let it rise for 1 to 1.5 hours.
  5. Mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in another bowl.
  6. Preheat oven to 475°F (245°C) with the pizza stone or baking sheet inside.
  7. Roll out the risen dough into a thin circle (12 inches).
  8. Transfer to parchment paper; spread cheese mixture over the dough and sprinkle fresh thyme on top.
  9. Bake for 10-12 minutes until golden and bubbly.
  10. Drizzle with olive oil and honey before slicing.
