  • ½ cup oil (any preferred)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350º F. Prepare two 9-inch round cake pans with cooking spray and parchment paper.
  2. In a large bowl, mix together the gluten-free flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla extract to the dry ingredients and mix on medium speed until well combined.
  4. Gradually add boiling water while mixing on low speed; then increase to high for about one minute until fully blended.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring them to a wire rack to cool completely.
