  • 4 cups shredded zucchini
  • 1/2 cup diced yellow onion
  • 2 tbsp minced garlic
  • 2 eggs (beaten)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup grated Parmesan cheese
  • 3 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C) and spray an 8” x 8” baking dish with non-stick cooking spray.
  2. Drain shredded zucchini using a cheesecloth or kitchen towel to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini, onion, garlic, beaten eggs, mozzarella, cheddar, and half of the Parmesan cheese. Mix well.
  4. Pour mixture into the prepared baking dish and bake for 20 minutes.
  5. While it bakes, melt butter in a saucepan and mix with remaining Parmesan and crushed beef rinds or Parmesan crisps.
  6. After 20 minutes, sprinkle the topping over the casserole and bake for another 5-8 minutes until golden brown.
  7. Let cool slightly before serving warm.
