  • 4 tbsp butter
  • 2 oz cream cheese
  • 1 tbsp vegan gelling agent
  • 1/2 tsp vanilla
  • 2 tsp cold water
  • 16 oz cream cheese
  • 2/3 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 1/3 cup cocoa powder
  • 1/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 3/4 cup sugar-free chocolate chips
  • 4 oz heavy cream

Instructions

  1. Prepare the crust by mixing almond flour, cocoa powder, sweetener, melted butter, cream cheese, vegan gelling agent, and vanilla extract in a bowl until combined. Add cold water gradually until cohesive. Press into a springform pan.
  2. For the filling, beat cream cheese and sweetener until smooth. Mix in cocoa powder, heavy cream, sour cream, vanilla extract, and baking soda until well combined. Fold in prepared vegan gelling agent.
  3. Pour the filling over the crust in the springform pan and smooth the top.
  4. Chill in the refrigerator for at least 4 hours or overnight until firm.
  5. To make ganache, melt sugar-free chocolate chips with heavy cream over low heat until smooth; pour over chilled cheesecake before serving.
