  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites (room temperature)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Heat over medium-high until bubbling.
  2. While the sugar mixture heats up, whip egg whites and cream of tartar in a stand mixer until soft peaks form (about 3-4 minutes).
  3. When the sugar syrup reaches 240°F, remove from heat and slowly pour it into the whipped egg whites while mixing on medium speed.
  4. Continue whipping on medium-high for about 7-8 minutes until the mixture thickens and cools slightly before adding vanilla.
  5. Allow to cool completely and store in an airtight container at room temperature for up to two weeks.
