  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and peanut butter with granulated and brown sugars until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture until a dough forms.
  5. Shape dough into small ovals and press with a fork for the classic pattern. Sprinkle with extra sugar.
  6. Bake for 8–10 minutes until lightly golden; let cool completely on a wire rack.
  7. For the filling, beat together creamy peanut butter and softened butter; mix in powdered sugar and vanilla until smooth. Adjust texture with milk if needed.
  8. Assemble sandwiches by spreading filling onto one cookie's flat side and topping it with another.
