  • 1 cup shredded cooked chicken (230 grams)
  • 1 cup 1% cottage cheese (264 grams)
  • 1/2 cup Frank’s RedHot Sauce (127 mL)
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/4 cup light feta cheese (57 grams)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice each zucchini in half lengthwise and scoop out the centers to create boats.
  3. Blend the cottage cheese until smooth.
  4. In a mixing bowl, combine shredded chicken, blended cottage cheese, buffalo sauce, garlic powder, onion powder, paprika, dried parsley, black pepper, and salt.
  5. Fill each zucchini boat with the mixture and place on a parchment-lined baking sheet.
  6. Bake for 20 minutes until slightly tender.
  7. Sprinkle feta cheese on top and bake for an additional 10 minutes.
  8. Garnish with chopped parsley before serving.
