  • 1 whole chicken divided into 8 pieces or 4 skin-on chicken breasts
  • 3 tbsp salted butter
  • 1 cup brown mushrooms, halved
  • 3 shallots, diced
  • 2 medium stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 tbsp sage, minced
  • 2 tsp parsley, minced
  • 1/4 cup all-purpose flour
  • 1/2 cup white grape juice
  • 2 cups chicken stock
  • 1 lb baby yellow potatoes, halved
  • 1/4 cup cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Pat dried chicken pieces and season with salt and pepper.
  3. Melt butter in a Dutch oven; brown the chicken on both sides for about 3–5 minutes each, then set aside.
  4. Sauté mushrooms, shallots, celery, and garlic until softened; add herbs and flour, mixing well.
  5. Deglaze with white grape juice and gradually stir in chicken stock until sauce thickens.
  6. Add halved potatoes to the sauce; return browned chicken to the pot.
  7. Roast uncovered for approximately 40–45 minutes until the internal temperature reaches 165°F (74°C).
  8. Allow to rest covered for at least 10 minutes before serving.
