  • 2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 2 cups orange juice
  • 1/4 cup coconut aminos
  • 3 tablespoons honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon grated fresh ginger
  • 1/2 tablespoon orange zest
  • Steamed broccoli or green beans

Instructions

  1. Cook rice and vegetables according to package directions.
  2. In a large sauté pan, heat olive oil over medium-high heat and add cubed chicken. Cook for about 10 minutes until golden brown.
