  • 1/4 cup Dutch cocoa powder

  • 1/2 cup milk + 3 tbsp cornstarch (for thickening)
  • Optional: 3 oz chocolate chips or broken-up bar, 3/4 tsp pure vanilla extract

Instructions

  1. 1. In a saucepan, heat 2 cups of milk over medium heat. Stir in salt, cocoa powder, and sweetener until warm.
  2. 2. In a small bowl, whisk together cornstarch and 1/2 cup of milk until dissolved.
  3. 3. Gradually add the cornstarch mixture to the warm milk and bring to a boil while stirring for about 2 minutes.
  4. 4. Lower the heat and simmer for another minute before turning off the heat.
  5. 5. Stir in vanilla extract and any optional chocolate pieces until melted.
  6. 6. Transfer pudding to a container and refrigerate for at least a few hours or overnight before serving.
