  • 1 lb lean ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups cauliflower florets
  • 1 cup cauliflower rice
  • ½ cup carrot (sliced)
  • 1 cup celery (sliced)
  • 1 cup green beans
  • 14 oz canned diced tomatoes (with juices)
  • 6 cups beef broth
  • Italian seasoning
  • salt & pepper

Instructions

  1. In a large pot, brown the ground beef with the chopped onion and minced garlic until no pink remains. Drain excess fat.
  2. Add cauliflower florets, cauliflower rice, sliced carrots, celery, green beans, diced tomatoes with juices, beef broth, Italian seasoning, salt, and pepper. Stir well.
  3. Bring to a boil over medium-high heat. Reduce heat to low and simmer for about 15 minutes until vegetables are tender.
