  • 1 cup cooked rice (white or brown)
  • 1 can (14 oz) diced tomatoes, drained

  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by dicing the zucchinis, chopping the onion, mincing the garlic, and draining the tomatoes.
  2. In a skillet over medium heat, heat olive oil and sauté chopped onion and minced garlic until translucent (about 2-3 minutes).
  3. Add ground beef to the skillet; break apart and cook until browned (5-7 minutes). Drain excess fat if necessary.
  4. Stir in diced zucchinis along with oregano, cumin, salt, and pepper; cook until tender (5-7 minutes).
  5. Mix in drained diced tomatoes and let simmer for an additional 5 minutes.
  6. Serve over cooked rice and garnish with fresh parsley if desired.
