  • 275 g gluten free plain flour
  • 125 g cold unsalted butter or dairy-free butter
  • 1 tsp xanthan gum
  • Pinch of salt
  • 50 g light brown sugar
  • 1 large egg (beaten)
  • 12 tbsp cold water

Instructions

  1. Cut the butter into small cubes and place in a mixing bowl.
  2. Sift in gluten free flour and rub butter into flour until it resembles breadcrumbs.
  3. Add xanthan gum, brown sugar, and salt; mix until combined.
  4. Gradually add beaten egg while mixing on low speed or with a fork.
  5. Slowly incorporate cold water until you achieve a slightly sticky dough.
  6. Gather dough into a ball, wrap in cling film, and chill for 30 minutes.
  7. Preheat oven to 180°C/160°C fan.
  8. Roll out chilled dough to about 3-5mm thick, then transfer to a pie tin.
  9. Prick the base gently with a fork and fill with baking weights.
  10. Bake as directed depending on your filling choice.
