  • 3/4 cup all-purpose gluten free flour (110g)
  • 4 tbsp powdered sugar (30g)
  • 1/4 tsp baking powder
  • 1/4 tsp xanthan gum (omit if your flour blend contains gum)
  • 2 oz chocolate (50g, dairy-free chocolate chips)

Instructions

  1. Preheat your oven to 350ºF.
  2. Line a baking sheet with parchment paper and fit a piping bag with a star tip.
  3. In a mixing bowl, beat together the dairy-free margarine and powdered sugar until creamy.
  4. Stir in the gluten free flour, baking powder, and xanthan gum until well combined.
  5. Transfer the mixture to the piping bag and pipe three-inch-long cookie fingers onto the lined baking sheet.
  6. Bake for 10-15 minutes until pale golden. Cool on the wire rack.
  7. Melt the chocolate and dip both ends of each cookie before setting them back on the wire rack.
