  • 3/4 cup softened butter
  • 2 large eggs
  • 1 Tbsp milk
  • 1/2 cup sorghum flour
  • 1/2 cup brown rice flour
  • 1/4 cup coconut flour
  • 3/4 cup raspberry preserves
  • 3 cups shredded coconut
  • 2 Tbsp granulated sugar
  • 1 Tbsp tapioca starch
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs, milk, and vanilla; mix until combined.
  3. In another bowl, whisk together sorghum flour, brown rice flour, coconut flour, tapioca starch, xanthan gum, baking powder, and salt. Gradually combine with the wet mixture until just blended.
  4. Spread the base evenly in the baking pan. Dollop raspberry preserves on top and gently swirl it into the batter.
  5. For the topping, beat additional eggs with granulated sugar until smooth; mix in shredded coconut and melted butter.
  6. Spread the coconut mixture over the raspberry layer.
  7. Bake for about 40 minutes or until golden brown on top. Allow cooling completely before slicing.
