  • 2/3 cup brown sugar
  • 1/3 cup white sugar
  • 1½ teaspoons cinnamon
  • 1½ cups gluten-free all-purpose flour
  • ½ cup butter or dairy-free butter, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup Greek yogurt or dairy-free yogurt
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with bakery-style liners.
  2. In a bowl, mix melted butter, brown sugar, white sugar, cinnamon, and salt until combined for the topping. Set aside.
  3. In another bowl, cream room-temperature butter and white sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and Greek yogurt.
