  • 2 2/3 cups Gluten Free All Purpose Baking Flour (sifted)
  • 1 cup cocoa powder (sifted)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 cup white sugar
  • 3/4 cup light brown sugar
  • 3 eggs
  • 1 teaspoon vinegar (white or apple cider)
  • 1 tablespoon vanilla extract
  • 2/3 cup oil (safflower, canola, or refined avocado)
  • 1 cup hot brewed coffee or boiling water

Instructions

  1. Preheat your oven to 350°F.
  2. Prepare one 9×13 inch cake pan or two round 8-inch cake pans by spraying them with oil and lining with parchment paper.
  3. In a large mixing bowl, whisk together all wet ingredients except the coffee/water.
  4. Gradually add in sifted dry ingredients, mixing until fully combined.
  5. Stir in the hot coffee/water until the batter is smooth and thin.
  6. Pour the batter into the prepared pan(s) and bake for 35–45 minutes (sheet cake) or 32–37 minutes (layer cakes), checking doneness with a toothpick.
  7. Cool in the pan for about 10–20 minutes before transferring to a cooling rack.
