  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 4 sprigs fresh thyme
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season short ribs with salt and pepper. Brown in a large Dutch oven with olive oil over medium-high heat; set aside.
  2. In the same pot, add butter and onions, cooking on low heat for 30-40 minutes until caramelized.
  3. Add garlic and cook briefly before deglazing with apple vinegar.
  4. Stir in beef stock, thyme, bay leaves, and return short ribs to the pot. Cover and simmer for 2.5 to 3 hours until tender.
  5. Preheat broiler; toast baguette slices until golden. Top each slice with Gruyère cheese and broil until melted.
  6. Remove bay leaves and thyme stems from soup before serving; ladle into bowls topped with Gruyère toast.
