  • 1/4 cup cane sugar
  • 1/8 teaspoon salt
  • 3/41 cup cold purified water
  • 1/2 cup unsalted cold butter
  • Jam or Nutella for filling
  • 1 small egg for egg wash

Instructions

  1. In a mixing bowl, combine gluten free flour blend, cane sugar, and salt; whisk until blended.
  2. Add cold water to the dry ingredients and mix until just combined. Incorporate cold butter chunks using a fork or hands until dough forms with visible lumps of butter.
  3. Wrap dough in plastic wrap and refrigerate for 30-45 minutes.
  4. Roll out chilled dough into a rectangle on a floured silicone mat; perform an envelope fold to create layers. Repeat this process six times.
  5. Roll out again to about 1/4-inch thickness, cut into rectangles, fill with desired fillings, and brush with egg wash.
  6. Preheat oven to 425º F; freeze pastries for 15 minutes before baking for about 15-20 minutes until golden brown.
