  • 2 tbsp olive oil
  • 1 white onion
  • 2 medium-large carrots
  • 2 cloves garlic
  • 250 g dried red lentils
  • 1 tin chopped tomatoes
  • 23 large baking potatoes

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Sauté diced onion and carrot in olive oil for 4-5 minutes until softened. Add minced garlic and corn flour; cook for another 1-2 minutes.
  3. Stir in lentils, chopped tomatoes, vegetable stock, herbs, and spices; bring to a boil then simmer for 15 minutes.
  4. Thinly slice potatoes while the lentil mixture simmers.
  5. Transfer the lentil mix to a baking dish. Layer sliced potatoes on top, drizzle with olive oil, season, and cover with foil.
  6. Bake covered for 30 minutes; remove foil and bake an additional 20 minutes until golden brown.
  7. Serve hot.
