  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped turnip (or potato)
  • 2 1/2 cups chopped sweet potato
  • 2 minced garlic cloves
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 1 cup green (or brown) lentils
  • 1 cup red lentils
  • 12 tablespoons turmeric
  • 1 teaspoon ginger
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup almond milk
  • 1 cup spinach
  • 1 cup fresh herbs
  • 1 teaspoon lemon juice
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Heat 1 tablespoon avocado oil in a large stockpot over medium heat.
  2. Sauté 1 cup chopped onion, 1 cup chopped celery, 1 cup chopped turnip (or potato), and 2 minced garlic cloves for about 5 minutes until softened. Season with 1 teaspoon sea salt, 1 teaspoon black pepper, and 2 teaspoons dried thyme; cook for an additional 2 minutes.
  3. Stir in 1 cup green (or brown) lentils, 1 cup red lentils, 2 tablespoons turmeric, 1 teaspoon ginger, and 1 teaspoon cumin. Sauté for another minute before adding 4 cups vegetable broth and 2 cups water. Bring to a boil then reduce heat to simmer for about 30 minutes.
  4. Remove from heat and mix in 1 cup almond milk, 1 cup spinach, fresh herbs, 1 teaspoon lemon juice, and 1/2 teaspoon red pepper flakes until the spinach wilts.
