  • 1 cup chocolate graham crackers, finely ground
  • 6 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk or cream
  • 1 cup heavy whipping cream
  • 34 drops pure peppermint oil
  • 3 1/2 ounces bittersweet or dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine ground graham crackers, melted butter, and sugar in a bowl. Press into a tart pan and bake for 10 minutes. Cool.
  3. Bloom vegan gelatin in cold water, then microwave until dissolved.
  4. Melt white chocolate in intervals; mix with warm milk and add dissolved gelatin and peppermint oil.
  5. Whip heavy cream with powdered sugar until medium-stiff peaks form. Gently fold into the chocolate mixture.
  6. Fill the cooled tart shell with mousse and refrigerate until set (at least a few hours).
  7. Prepare glaze by heating cream, stirring in dark chocolate until smooth, then adding corn syrup and warm water.
  8. Pour glaze over the set tart; let it stand until firm.
