  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (russet or Yukon gold)
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt, to taste
  • Pepper, to taste
  • Dried thyme, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add turkey sausage, cooking until browned; drain excess grease.
  2. Sauté diced onion in the skillet until softened, then stir in minced garlic.
  3. Transfer the sausage mixture to the crockpot. Add diced potatoes, chicken broth, salt, pepper, and thyme.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are fork-tender.
