  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • ¼ cup breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable or canola oil for frying

Instructions

  1. Prepare the corn by draining canned corn or thawing and drying frozen corn.
  2. In a mixing bowl, whisk together the egg.
  3. Add flour, both cheeses, breadcrumbs, and spices to the egg; mix well.
  4. Gently fold in the corn until fully combined.
  5. Shape mixture into small balls or discs.
  6. Heat oil in a frying pan to 350-375°F (175-190°C) for frying or preheat oven to 400°F (200°C) for baking.
  7. Fry each bite for about 2-3 minutes until golden brown or bake for 15-20 minutes while flipping halfway through.
  8. Drain excess oil if fried and serve warm with dipping sauces.
